John Wilson

As the son of a brewer, and the grandson of a brewer and bootlegger, John Wilson has been brewing for over twenty years. While spending almost a decade living and working abroad, John developed a passion for traditional fermentation techniques. As a result, he joined the Fermentation Science program at Colorado State University. John is currently a graduate student in CSU’s department of Food Science researching methods of traditional fermentation and how they can be integrated into modern food systems.
